- 4 egg Yolks
- 1⁄4 teaspoon water
- 1⁄4 teaspoon white wine vinegar
- 250 g ghee
- 1⁄2 teaspoon cayenne pepper
- lemon juice
- sea salt

Combine the egg yolks, water, and white wine vinegar in a metal or heatproof glass bowl. Whisk vigorously for two minutes to break up the yolks.

Fill a saucepan with water and bring it to a boil. Then, remove it from the heat and wait for 30 seconds. Place the bowl with the egg yolk mixture on top of the saucepan. Whisk the mixture continuously for five minutes until the egg yolks double in size.
