How to make Simple Raspberry Friands
Raspberry Friands are delicious and easy to make almond-based muffins with fresh raspberries. These light, fluffy, muffins have a crispy top and a tender crumb that's perfect for breakfast or brunch.
Ingredients
- 1 Cup almond food
- 1 Cup powdered sugar
- 1⁄2 Cup all-purpose flour
- 2 tbls unsalted butter
- 1 teaspoon vanilla extract
- 1 Cup fresh raspberries
- sliced almonds
- Powdered sugar for dusting

Directions
Preheat oven to 375 F. Prepare a 12 muffin tin with butter spray.
In a mixing bowl, mix together the almond meal, powdered sugar and all-purpose flour until well combined.
In a bowl, beat the egg whites until frothy. Add the butter and vanilla extract and mix until well combined.
Pour the egg mixture into the almond mixture and whisk until smooth.
Gently fold in the fresh raspberries.
Divide the batter evenly among the muffin cups (about ¾ full).
Sprinkle sliced almonds over the top of each muffin.
Bake for 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
Let the Raspberry Friands cool in the muffin tin for 5-10 minutes, then remove and place them a wire rack to cool completely.
Dust the cooled muffins with powdered sugar and add sliced almonds before serving.
