How to make Sweet & Spicy Spiced Rice
Spiced rice is a colorful and flavourful dish made with aromatic spices and nutritious vegetables. This dish brings an exotic twist to your regular rice offering a blend of sweet and spicy tastes. It’s not only delicious, but also easy to make, perfect for a comforting weekday meal.
Ingredients
- 2 cups of basmati rice
- 4 cups of water
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 carrots, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of turmeric powder
- 1 teaspoon of cumin seeds
- 1 teaspoon of coriander powder
- 1 teaspoon of paprika
- Salt, to taste
- 2 tbls of vegetable oil
- 2 tbls of chopped fresh cilantro

Directions
Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 20 minutes.
In a large saucepan or skillet, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they begin to pop.
Add the chopped onion, bell pepper, and carrots to the pan. Sauté until they soften, add the minced garlic, and cook for another minute.
Add in the turmeric, coriander, and paprika. Mix well ensuring that the vegetables are well coated.
Drain the rice thoroughly and add it to the pan. Stir well ensuring that all grains of rice are coated with the spices.
Add the water and salt, increase the heat and bring to a boil.
Lower the heat to a simmer, cover the pan and cook for 15-20 minutes, or until the rice is cooked and all the water is absorbed.
Fluff the rice with a fork to separate the grains.
Serve the spicy rice garnished with the freshly chopped cilantro.
