Japanese Rice Balls with Filling Onigiri Recipe
Onigiri, also known as Japanese rice balls, is a simple and comforting Japanese dish that plays a big role in Japanese food culture. It's a great on-the-go snack, perfectly packaged and can be filled with any variety of ingredients. - 3 cups of Japanese short-grain rice
- 31⁄2 cups of water
- 1⁄2 teaspoon of salt
- 8 letters of Nori seaweed
- Filling (half a cup of umeboshi, tuna mayo salmon flakes or pickled plum are popular choices)

Directions
Rinse the rice in cold water until the water runs clear.
Add the washed rice and 3.5 cups of water into a pot. Let it soak for at least 30 minutes.
Turn on heat to high and bring it to a boil. Once boiling, reduce heat to the lowest and cover the pot with a lid. Let it cook for 12-15 minutes.
After the cooking time is up, let it steam for another 10-15 minutes without removing the lid.
Transfer the cooked rice into a bowl and let it cool down slightly so that it doesn't burn your hands.
Wet your hands with salty water and take approximately a handful of rice. Form the rice into a triangle by pressing lightly with your both hands.
Open a hole in the middle of the rice ball and put your preferred filling there, then cover it with a bit of rice.
Wrap the rice triangle with a Nori sheet. Repeat until all the rice has been used.
Serve immediately or wrap them in plastic wrap for later.
