1. Step

Preheat the oven to 180°C. Line the muffin tins with paper.

2. Step

Mix the flour, sugar, baking powder and vanilla sugar in a large bowl. It is important that everything is thoroughly mixed as this will ensure the muffins have an even texture.

3. Step

In another bowl, mix the milk, melted butter and eggs. Give the eggs a few minutes to warm to room temperature before adding to the other ingredients, this will help them to mix together more easily.

4. Step

Add the previously mixed dry ingredients to the egg mixture and mix well. Mixing too long can make the muffins hard, so mix just until the ingredients are just combined.

Divide the dough in half and add the cocoa powder to one half.

6. Step

Spoon the batter into the muffin tins, first the plain and then the cocoa. Use a small spoon to scoop out the batter so that it doesn't all stick to your hands.

7. Step

Bake the muffins in the preheated oven for about 30 minutes. Carefully test them with a pin towards the end of the baking time to make sure they don't burn.

8. Step

Cool the muffins completely before eating. A typical mistake in the New Year's rush is to forget to leave them to cool and the chocolate can get hot.
