New Year's Pretzel
The New Year's Pretzel is a traditional pastry that is primarily baked and gifted in Germany and German-speaking countries for New Year's. It symbolizes luck and blessings for the new year. The pretzel is sweet, soft, and fluffy, and it tastes divine with butter or jam.
Ingredients
Dough
- 500 g flour
- 1 Pack dried yeast
- 80 g sugar
- 250 ml milk
- 1 Pinch salt
- 1 Piece yolk
- 80 g softened butter

- 1 Piece yolk
- 1 tbsp milk
- 1 tbsp Pearl sugar

Directions
1. For the New Year's pretzels, first mix the yeast in a bowl with the sugar and lukewarm milk until the sugar and yeast have dissolved.
2. Sift the flour into a large bowl and make a well in the middle. Add the yeast mixture, salt, egg yolks, and soft butter and knead into a smooth dough with your hands or a mixer with dough hooks.
3. Cover the dough and let it rise in a warm place for about 1 hour until it has doubled.
4. Briefly knead the dough again on a floured work surface, then shape into a roll and arrange in a pretzel shape. Press down firmly on the ends of the pretzels.
5. Whisk the remaining egg yolk with the milk and brush the New Year's pretzel with it. Sprinkle with pearl sugar.
6. Bake the New Year's pretzel in the preheated oven at 180 °C (convection 160 °C) for about 30 minutes, until it is golden brown.
7. Let it cool down and enjoy! Also goes well with breakfast on holidays.
