No-bake Fruit Cheesecake with Mascarpone
No-bake fruit cheesecake with mascarpone is a delicate and fresh dessert, especially appreciated in the summer months. It is fast and easy to prepare and its cooling effect is ideal for a sweet end of the day.
Ingredients
Corpus
- 200 g Ladyfinger cookies
- 90 g melted butter

- 500 g mascarpone
- 200 g Whipped curd cheese
- 100 g sugar
- 1 a piece vanilla sugar
- 250 ml whipping cream
Fruit topping
- 300 g fruit to taste
- 1 packing gelatin

Directions
Crush the biscuits and mix with melted butter. Press the mixture into the bottom of a greased cake form and let it harden in the fridge.
Whisk the mascarpone, curd cheese, sugar, and vanilla sugar until smooth. Then, add cream and whisk for a while longer.
Pour the filling onto the hardened base and let it set in the fridge for at least 2 hours.
Wash the fruit and chop it finely. Prepare the gelatine according to the instructions on the package and mix it with the fruit.
Pour it over the solidified filling and let it set in the refrigerator for at least an hour.
Before serving the cheesecake, carefully remove it from the form. It can be served with fresh fruit and whipped cream for decoration.
