Old Fashioned Creamy Baked Rice Pudding with Raisins
Savor the comforting delight of the Old Fashioned Baked Rice Pudding, a nostalgic trip back to your childhood days. This sweet creamy delicacy is an ideal dessert to end a home-cooked dinner or to simply satisfy your mid-day sweet tooth. An added bonus? Its ingredients can easily be found in your pantry.
Ingredients
- 3⁄4 Cup of uncooked white rice
- 2 cups of milk, divided
- 0.3 Cup of white sugar
- 1⁄4 teaspoon of salt
- 1 egg, beaten
- 0.6 Cup of golden raisins
- 1 tablespoon of unsalted butter
- 1⁄2 teaspoon of Vanilla Extract
- A sprinkle of nutmeg or cinnamon (optional)

Directions
Start with preheating your oven to 325 degrees F (165 degrees C).
Simmer the rice and water in a saucepan over medium heat until the water is mostly absorbed, about 15 minutes.
In a separate bowl, mix 1 1/2 cups of milk, sugar, and salt. Pour this into the pot with the rice.
Cook the milk-rice mixture over medium heat until it’s creamy, stirring frequently for around 15 to 20 minutes.
Mix the beaten egg and the remaining 1/2 cup of milk in a bowl. Add this mixture into the pot, stirring continuously.
Add the butter and raisins into the pot and incorporate them well into the mixture.
Stir in the vanilla extract. If using, sprinkle cinnamon or nutmeg for a subtly spiced twist.
Pour the final mixture into your chosen baking dish.
Bake the mixture in the preheated oven until set, around 1 hour and 30 minutes.
Be sure to stir every 20 minutes during the first hour of baking.
Serve the pudding warm (or chilled if preferred) and enjoy this delightful dessert!
