Whip the cream until it is swollen, frothy and creamy, but not firm. In another bowl, place the ricotta and icing sugar and beat until creamy and smooth. Pour the whipped cream into the ricotta bowl and continue to whip.

Cut off the Panettone top and divide the remaining cylinder into three disks of the same thickness.

Assemble the Panettone Cake by placing one disc on the serving plate, moisten it with a little of the syrup and fill it with a little of the filling. Repeat this procedure two more times, obtaining at the end three layers of panettone and two of filling.
