Pour the water, sugar and rum into a saucepan, bring to a boil and leave to cool.

Whip the cream until it is swollen, frothy and creamy, but not firm. In another bowl, place the ricotta and icing sugar and beat until creamy and smooth. Pour the whipped cream into the ricotta bowl and continue to whip.

Cut off the Panettone top and divide the remaining cylinder into three disks of the same thickness.
