Ingredients
Pastry
- 100 g unsalted butter
- 50 g icing sugar
- 1 egg
- 50 g almond food
- 200 g plain flour
- 1 pinch salt
- 3 poached pears
Almond Filling
- 100 g unsalted butter
- 100 g semolina sugar
- 2 eggs
- 100 g almond food

Directions
Preheat oven to 160 C. Beat sugar and butter together. Add an egg and almond meal, mix, and add flour and salt. Roll out 4 mm thick. Chill for an hour, then move to your tart pan, press in the sides and cut off the excess. Chill for another hour, then poke holes into the bottom with a fork. Bake for 15-20 minutes.

Cut the poached pears in half, then slice the halves. Fill the pre-baked tart with filling, and place the pear halves on top. Sprinkle flaked almonds on top, then bake for 40-45 mintues.
