Perfect Baked Butternut Squash Gnocchi

Ingredients
- 2 cups butternut squash puree
- 2 eggs
- 1 teaspoon nutmeg
- 21⁄4 cups flour
- 1⁄2 Cup parmesan
- salt to taste
- 2 tbls of butter
- fresh sage leaves
- Some extra parmesan for serving

Preheat your oven to 180°C (350°F).
Prepare your butternut squash puree ahead of time.
In a large bowl, mix the squash puree, eggs, nutmeg, and salt until combined.
Gradually add in the flour until the dough comes together but is still slightly sticky.
Turn the dough out onto a floured surface and gently knead it, adding more flour if needed.
Roll the dough into long \snakes\ then cut the snakes into small pieces - these are your gnocchi.
Bring a large pot of salted water to a boil, and cook the gnocchi until they float to the top.
Transfer the cooked gnocchi to a baking dish, and top them with the butter, parmesan cheese, and sage leaves.
Bake for 20-30 minutes, or until the cheese is bubbly and golden brown.
Serve hot, sprinkled with extra parmesan.
