Perfect Simple Coconut Milk Rice
Coconut rice is a delicious and fragrant side dish that pairs perfectly with a variety of dishes. Made with fragrant jasmine rice cooked in coconut milk, this recipe adds a tropical twist to your meal.

- 1 Cup jasmine rice
- 11⁄2 cups coconut milk
- 1⁄2 Cup water
- 1 tablespoon oil
- 1⁄2 teaspoon salt

Directions
Rinse the jasmine rice thoroughly under cold water until the water runs clear. Drain and set aside.
In a medium-sized saucepan, heat vegetable oil over medium heat. Add rice and saute for 1-2 minutes until lightly toasted.
Add coconut milk, water, and salt to the saucepan. Stir until well combined.
Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a tight-fitting lid and let it cook for about 15 minutes, or until the rice has absorbed the liquid.
Remove the sauce from the heat and let it sit, covered, for an additional 5 minutes.
Fluff the rice with afork before serving.
