Directions
Preheat your oven to 350 degrees (Fahrenheit). While it's heating, line a baking tray with parchment paper. This ensures easier cleanup, as the nuts can get sticky.
In a large bowl, combine your varied nuts with honey or maple syrup, along with olive oil. Thoroughly mix until every nut is coated. The type and combination of nuts you use aren't strict; pick your favorites or just what you have on hand.
Once your nuts are nicely coated, spread them evenly across your lined baking tray. Make sure they're in single layer to ensure even roasting.
Sprinkle the nuts with your chosen spices (salt, smoked paprika, and cinnamon), and toss them around a bit to distribute the spices evenly.
Pop the nuts into your preheated oven, roasting for 10-15 minutes. It's important to stay nearby and check on them frequently after the first 10 minutes. When you can smell the sweet, nutty aroma, they're almost ready. Do not let them get too dark as they will continue cooking a little once out of the oven.
Remove the nuts from the oven and let them cool down completely. They will become crunchier as they cool down.
