Pizza with Gorgonzola Cheese and Caramelized Onions

Ingredients
- 1 pizza dough (store-bought or homemade)
- 1 Cup of gorgonzola cheese
- 1 large red onion, sliced thinly
- 2 tbls olive oil
- 1 teaspoon sugar
- salt to taste
- freshly ground black pepper
- Fresh arugula leaves for topping

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
Heat oil in a pan over medium heat and add the sliced onions. Cook until they become translucent and start to caramelize. Add sugar, salt, and pepper. Cook until the onions are fully caramelized, then set aside.
Roll out your pizza dough on a lightly floured surface. Shape it according to your preference, thin or thick.
Transfer the pizza dough to your heated pizza stone or baking sheet. Arrange the caramelized onions evenly on the dough, leaving the edges for the crust.
Crumble Gorgonzola cheese over the onions and drizzle a little olive oil on top.
Bake in the preheated oven for about 12-15 minutes or until the crust is golden and cheese is bubbly and slightly browned.
Remove from the oven and top with fresh arugula leaves before serving.
