Prepare your 12 eggs by filling a large saucepan with water. Then, place it on the stove and bring it to a rolling boil.
Cover the saucepan and remove the water from the heat once the water is boiling. Let the eggs sit covered for 10 minutes, allowing them to cook gently in the residual heat.
Prepare a bowl of cold water. Carefully drain the hot water from the saucepan and transfer the eggs to the bowl of cool water. Let the eggs sit in the cool water for a few minutes to cool down.
Peel the eggs and slice each egg in half lengthwise. Handle them gently to keep the halves intact. Place the egg white halves on a serving platter, arranging them neatly.
In a small mixing bowl, place the yolks from the egg halves. Use a fork to mash up the yolks until smooth and crumbly. Add mustard, mayonnaise, onion, Tabasco sauce, and a sprinkling of salt and pepper to the mashed yolks. Mix everything well.
To fill the egg halves, use a piping bag fitted with a star tip to pipe the egg yolk mixture into the egg white halves, or use a spoon to scoop and fill the stuffing into the egg halves.
Sprinkle the deviled eggs with paprika for added flavor and visual appeal. You can also decorate them with fresh parsley leaves.
