Quick Chinese Crispy Honey Garlic Prawns

Ingredients
- 500 g large raw prawns, peeled and deveined
- salt to taste
- 1⁄2 Cup cornflour
- 2 egg whites
- 4 tbls vegetable oil
- 2 cloves of garlic, finely chopped
- 2 tbls freshly grated ginger
- 1⁄4 Cup With
- 2 tbls soy sauce
- 2 green onions, sliced
- Sesame seeds for garnish

Directions
Rinse the prawns under cold water, then pat dry with a kitchen towel. Season with salt.
Dip the prawns in egg whites then coat evenly with cornflour.
Heat the vegetable oil in a large frying pan over medium-high heat. Fry the prawns in batches for 2-3 minutes on each side, or until crispy and golden brown. Remove with a slotted spoon and drain on kitchen paper.
Discard excess oil from the frying pan, leaving about 1 tablespoon. Add the garlic and ginger, sauté until fragrant.
Add honey and soy sauce, simmer for about 2 minutes until the sauce thickens.
Return the prawns to the frying pan and toss to coat in the honey sauce. Continue cooking for another 2-3 minutes until prawns are heated through.
Transfer the honey prawns to a serving dish, sprinkle over the sliced green onions and sesame seeds.
Serve the honey prawns immediately with steamed rice, if desired. Enjoy hot.
