- 8 ounces of whole wheat pasta (penne or fusilli)
- 1 tablespoon of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 yellow squash, diced
- 1 zucchini, diced
- 1 tomato, diced
- 1 teaspoon of dried oregano
- salt and pepper
- Parmesan cheese or vegan alternative, grated (optional)

1. Step
Cook the pasta according to the instructions on the package.
2. Step
In a large skillet, heat the oil and add onion and garlic. Saute until translucent.
3. Step
Add the peppers, squash, and zucchini to the skillet. Saute for about 7 minutes until vegetables become tender.

Add the tomato, dried oregano, salt and pepper. Saute for another 2-3 minutes until slightly soft.

Add the cooked pasta to the skillet and toss with the mixture until evenly combined.
