Roasted Cauliflower with Tahini and Goji Berries

Ingredients
- 1 cauliflower, chopped
- 2 tablespoon coconut oil
- 1 tablespoon fresh turmeric, zested
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 1 tablespoon plain tahini
- 2 tablespoon goji berries, rehydrated

Directions
Pre-heat oven to 400°F.
Place cauliflower on sheet pan and cover with foil.
Poke holes in foil.
Roast for 20 minutes. Remove from oven and mix cauliflower.
Cover with foil again and poke holes.
Roast for another two minutes.
Place goji berries in water and let soak for 20 minutes (do ahead of time).
Sprinkle goji berries & drizzle tahini on top.
