Savoury Rustic Silverbeet Feta Pie
A savory and hearty Silverbeet Pie that uses fresh silverbeet (also known as Swiss Chard), feta cheese and delicate puff pastry as the main ingredients. A perfect mixture of healthy greens, tangy feta, and buttery puff pastry makes this dish a satisfying yet healthy choice for lunch or dinner. It's a traditional dish often enjoyed in Mediterranean communities, but also a unique addition to any gathering.
Ingredients
- 1 kg fresh Silverbeet, washed stemmed and chopped
- 200 g feta cheese, crumbled
- 350 g puff pastry
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 2 eggs, lightly beaten
- 2 tbls olive oil
- Salt and pepper, to taste
- 1 tablespoon fresh dill, chopped (optional)

Directions
Preheat your oven to 180°C (350°F). Grease a pie dish lightly with some olive oil.
In a large pan over medium heat, sauté onions in olive oil until they become translucent.
Add the minced garlic to the pan and cook until fragrant.
Add the chopped silverbeet to the pan. Cook until the silverbeet has wilted and the liquid has evaporated.
In a large bowl, combine the cooked silverbeet, feta cheese, beaten eggs, salt, pepper, and optionally, dill. Mix until the ingredients are evenly distributed.
Roll out your puff pastry and line your greased pie dish with it, leaving an excess of pastry around the edges.
Pour the silverbeet mixture into the pie dish, spreading evenly.
Fold over the excess pastry to create a rustic border.
Bake in the preheated oven for about 45 minutes, or until the pastry is golden and the filling has set.
Let the pie cool for a few minutes before serving. Enjoy warm.
