Simple Creamy Fresh Tomato Pasta Bake

- 12 ounces of Penne pasta
- 2 tbls olive oil
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 bell pepper, diced
- 1 Cup mushrooms, sliced
- 2 cups fresh Tomatoes, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt and pepper to taste
- 1 Cup grated mozzarella cheese
- 1⁄2 Cup parmesan
- A few sprigs of fresh Basil for garnish

Directions
Preheat the oven to 375 degrees F (190 degrees C). Grease a large baking dish with a bit of olive oil.
In a large pot of boiling salted water, cook the penne pasta until al dente (firm to bite), then drain.
Heat the olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and diced bell pepper, sauté until the onions become translucent.
Add the sliced mushrooms and continue to cook for another 5 minutes until mushrooms are browned.
Add the diced tomatoes to the skillet. Stir in dried oregano, dried basil, salt, and pepper to taste. Let it simmer for about 10 minutes until the tomatoes are cooked down.
Toss the cooked pasta into the skillet and mix well to ensure it's well-coated with the vegetable mixture.
Transfer the pasta to the greased baking dish. Scatter over the grated mozzarella and parmesan cheeses.
Bake in the preheated oven for 15-20 minutes until the cheese is melted and slightly golden.
