Simple Delicious Oven Roast Carrots
This dish is not only vibrant on the plate, but it's also packed with sweet, earthy flavours that will make anyone fall in love with carrots all over again.
Ingredients
- 1 kg of carrots, peeled and cut into thick strips
- 3 tbls of extra virgin olive oil
- Coarse salt, to taste
- Pepper, to taste
- 2 tbls of fresh chopped parsley
- 1 tablespoon of honey or maple syrup (optional)

Preheat your oven to 200°C (400°F). While the oven is preheating, line a baking sheet with parchment paper. This will prevent the carrots from sticking and aids in an easier clean-up process.
Arrange the carrot strips on the prepared baking sheet. Ensure that they are spaced out and not overcrowding each other. This is crucial to achieve proper caramelisation and prevents steaming, which would make the carrots soggy.
Drizzle the olive oil over the carrots. You can toss them lightly to make sure each piece is coated, allowing for even roasting.
Season the carrots with coarse salt and pepper. Feel free to go light or heavy on these based on your preference.
Roast in the preheated oven for about 40-45 minutes. As someone who has prepared this several times, I recommend tossing the carrots once or twice during the roasting process to ensure even cooking.
If you're using honey or maple syrup, drizzle it over the carrots 5 minutes before the end of the cooking time. It will accentuate the natural sweetness and result in a more caramelized texture.
After roasting, garnish the carrots with chopped parsley. It brings a pop of freshness and color that complements the earthy roasted carrots.
Serve hot as a side dish to your preferred main course. Roast carrots go well with roast meats, grilled fish, and even a simple but rich pasta dish.
