Simple Quick Tofu Stir-Fry with Vegetables
This tofu stir-fry with vegetables is a simple, hearty, and healthy dish packed full of nutritional benefits. A perfect combination of crispy tofu cuboids, colorful and crunchy veggies all tossed in a zesty sauce. - 14 ounces of firm tofu
- 2 tbls of olive oil
- 1 Cup of bell peppers, sliced
- 1 Cup of broccoli florets
- 1 Cup of carrots, julienned
- 1 Cup of snow peas
- 4 cloves of garlic, minced
- 1 onion, thinly sliced
- salt and pepper to taste
For the Sauce:
- 2 tbls of soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of corn starch
- 1 tablespoon of brown sugar
- 1⁄2 teaspoon of crushed red pepper flakes

Directions
Begin with pressing the tofu to remove excess moisture. Cut it into cubes of desired size.
Heat a tablespoon of olive oil in a pan or wok over medium-high heat. Add the tofu and fry until golden and crispy on all sides. Remove and set aside.
In the same pan, add another tablespoon of olive oil. Stir in the sliced onion and minced garlic until it becomes fragrant.
Add the bell peppers, broccoli, carrots, and snow peas. Stir fry the vegetables for about 5-7 minutes until tender yet crisp.
While the vegetables are stir-frying, mix together the ingredients for the sauce in a bowl.
Once the vegetables are done, add the fried tofu back into the pan. Pour the sauce over the tofu and vegetables.
Toss everything together well, ensuring all the tofu and veggies are coated in the sauce. Cook for another 2-3 minutes.
Season with salt and pepper as per your taste.
Serve the tofu stir-fry hot alongside rice or noodles for a fuller meal.
