Directions
Preheat your oven to 200 degrees Celsius.
Place the chunky pieces of potato in a baking tray and drizzle with olive oil. Season with salt and pepper then stir well to ensure the potatoes are evenly coated.
Bake for about 30 minutes or until the potatoes are golden and crispy.
Meanwhile, in a pan, heat a tablespoon of olive oil. Add the garlic, red chilies, and smoked paprika. Cook lightly without burning for about 2 minutes.
Add the entire tin of tomatoes to the pan. Cook for about 15 minutes till the tomatoes break down and the mixture thickens.
Using a blender or hand blender, puree the tomato-chili mixture until smooth. Season with salt and pepper then transfer the sauce back to the pan to keep warm until the potatoes are ready.
Once the potatoes are done, you may drizzle with the spicy sauce and garnish with parsley. Some people also like it served with a cup of mayonnaise for dipping.
