Simple Vegetarian Curry Recipe
This delicious and healthy Vegetarian Curry Recipe with nutritious veggies and aromatic spices is perfect for a cozy and comforting dinner on a cold day.
Ingredients
- 2 tablespoon vegetable oil
- 1 onion
- 2 cloves garlic, minced
- 2 tablespoon grated ginger
- 2 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1⁄2 teaspoon turmeric powder
- 1⁄2 teaspoon cayenne pepper
- 1 small cauliflower, broken into florets
- 1 red bell pepper, diced
- 2 carrots, peeled and sliced
- 1 can of chickpeas, drained and rinsed
- 1 Cup of vegetable broth
- 1 can of diced tomatoes
- 1⁄2 Cup of coconut milk
- Salt and pepper, to taste
- Cilantro, for garnish

Directions
Heat the vegetable oil in a large pot over medium heat.
Add the onion, garlic and ginger and sauté for 2 minutes until fragrant.
Add the curry powder, cumin, coriander, turmeric and cayenne pepper and stir for 1-2 minutes until the spices are well combined.
Add cauliflower, pepper, and carrots and sauté for 7 minutes until tender.
Add the chickpeas, vegetable broth and diced tomatoes and bring the curry to a boil.
Lower the heat and simmer the curry for 20-25 minutes until the veggies are fully cooked and the sauce has thickened.
Stir in the coconut milk and season with salt and pepper.
Garnish curry with chopped cilantro and serve hot with rice or naan.
