Spinach soup with potatoes
A creamy spinach soup with potatoes that's perfect for lunch.

- 400 g Spinach (fresh, frozen or canned)
- 2 a piece Potatoes
- 1 a piece onion
- 2 cloves garlic
- 1 l vegetable broth
- 100 ml cooking cream
- 2 tablespoon olive oil
- Salt and black pepper
- Nutmeg for seasoning

1. Step
Peel the onion and garlic and chop finely. Peel the potatoes and cut into cubes. Clean and chop the spinach.
2. Step
Heat the oil in a frying pan and add the onion. Then add the garlic and let it fry for a while. This is the key moment - the onions and garlic give the soup a wonderful flavour.
3. Step
Add the potatoes and spinach and stir. Pour in the vegetable stock and simmer for about 20 minutes.

Then blend everything with an immersion blender until smooth.
5. Step
Pour in the cream, season with salt, pepper and nutmeg.
6. Step
Let the spinach soup simmer for another 5 minutes and serve.
