Stewed artichokes
A traditional Italian recipe, ideal for artichoke lovers. This dish requires few ingredients, but requires careful preparation to bring out the natural sweetness of the artichokes and the richness of the moist dressing.
Ingredients
- 8 whole artichokes
- 2 cloves garlic
- 1 handful Chopped parsley
- 100 ml olive oil
- salt and pepper
- 200 ml water

Clean the artichokes, remove the toughest outer leaves, cut the tips and put in cold water acidulated with lemon juice to prevent them from blackening.
In a large pan, sauté the garlic in olive oil.
Add the artichokes, salt, and pepper to the pan. Cook for a few minutes.
Add the water, cover and cook over medium heat for about 40 minutes, or until the artichokes are tender.
Sprinkle with chopped parsley before serving.
