PHOTO RECIPE Stuffed Eggplant

Ingredients
- 1 eggplant
- 1 mozzarella
- 2 onion
- 3 cloves of garlic
- 200 g rice
- ground turmeric
- salt and pepper
- Parsley leaves

Directions
We cut the eggplant into a fan so that it remains connected at the narrower end. We salt it and let it "sweat" for approximately 15 minutes to get rid of the bitterness.
In the meantime, we cook the rice until it's half-cooked with a pinch of turmeric.
We chop the ingredients with which we will fill the eggplant. Rinse the eggplant under cold water. We transfer the rice to a baking dish, place the eggplant on it and insert the ingredients into the slits. Season with salt, spice up and sprinkle the top with parsley.
Bake them covered at 220°C for approximately 30 minutes.
