Directions
Combine the yeast, sugar, and warm water in a bowl. Let it stand until the mixture is foamy, about 5 minutes. Add in the flour, salt, and olive oil. Stir until a dough forms.
On a lightly floured surface, knead the dough for about 5 minutes, until smooth and elastic. Form it into a ball and place it in a greased bowl. Cover it with a towel and let it rise for about 15 minutes.
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Divide the dough into 6 equal pieces. Roll each piece into a small circle.
Spoon a small amount of pizza sauce in the center of each circle, add some chopped pepperoni, sprinkle with garlic powder and dried oregano, and then top with shredded mozzarella cheese.
Fold over one side of the dough to meet the other, creating a half-moon shape. Press the edges to seal them, and make a few small slits on the tops to allow steam to escape.
Place the pizza pockets on the prepared baking sheet. Bake until golden, around 15 to 20 minutes. Let them cool slightly, then serve with additional pizza sauce for dipping if desired.
