Sweet potato pie

A great sweet potato or sweet potato pie, which I adore.

Dough:

  • 120 g butter Added to
  • 1 mug Plain flour Added to
  • water as needed Added to

Filling:

  • 2 a piece Sweet Potatoes Added to
  • 2 a piece Eggs Added to
  • 120 g Cane sugar Added to
  • 1 mug milk Added to
  • 2 spoons coconut oil Added to
  • 2 spoons corn starch Added to
  • ground cinnamon Added to
  • ground nutmeg Added to

1. Step

Peel and dice the sweet potatoes.

2. Step

Boil them in water to soften them.

3. Step

Meanwhile, prepare the dough. In a bowl, make a dough with flour, butter and a little water, adding as needed, and let it rest in the fridge for at least an hour.

4. Step

Blend the cooked sweet potatoes with the milk, cornstarch, eggs, oil and spices.

5. Step

Roll out the dough and put it in a baking tin that you have previously greased with butter. Do not forget to prick the dough with a fork.

6. Step

Spread the sweet potato mixture on the dough and bake the cake in the oven at 180 °C for about 30-40 minutes.
