Sweet purple potato muffins
Recipe for very interesting sweet purple potato muffins. The antioxidant content of purple potatoes is several times higher than that of conventional potatoes.
Ingredients
- 300 g purple potatoes
- 200 g Plain flour
- 175 g sugar
- 100 ml vegetable oil
- 3 pcs Eggs
- 1 bal baking powder
- pinch of salt
- Cinnamon for seasoning

Peel the purple potato, cut into cubes and boil in salted water until tender, about 15-20 minutes.
Blend the cooked potato into a mash and leave to cool.
Mix flour, sugar, baking powder, a pinch of salt and cinnamon in a bowl.
In another bowl, whisk the eggs with the oil and add the cooled purple potato mash.
Add the dry ingredients to the wet and mix well.
Divide the batter into muffin baskets and bake in a preheated oven at 180 degrees for about 20-25 minutes, until the muffins are nice and golden.
Let the muffins cool after removing from the oven.
