- 30 ml hot water
- 75 g currants
- 150 g plain flour
- 8 g baking soda
- 25 g light brown sugar
- 75 g shredded suet
- 100 ml milk
- Lemon zest
- 1 g mixed spice

Directions
Soak the currants in hot water for 30 minutes. Mix the flour, baking powder, mixed spice, lemon zest and sugar in a large bowl. Add the suet and mix again.

Pour in the currants and water half of the milk. Stir everything together until a dough starts to form. Add more milk as necessary until a sticky dough has formed.

Turn the dough out onto a floured surface and make a sausage shape. Wrap it in parchment paper, twisting the ends and tying it with string. Then, wrap it in aluminium.

Place the pudding in a steamer basket and a pan of simmering water. Cover the pan and steam the pudding for 2 hours, checking and adding more water if necessary.
