Tasty apple compote for Christmas
I love to prepare this applesauce recipe for Christmas. It is a recipe that I have inherited from my mother and it is a dish that always triumphs with all generations. The aroma that fills the house is unmistakable, and the balance of the sweetness of the apple and the spicy touch of cloves and cinnamon is simply perfect and unmistakably Christmasy.
Ingredients
- 8 Large apples (I prefer to use golden apples for their flavor and texture when cooked)
- 1⁄2 liter Of water
- 1⁄2 mug sugar
- 1 twig cinnamon
- 2 nails Odor
- The zest and juice of one lemon

Start by peeling the apples and removing the core. I recommend using an apple corer to make this job easier. Then cut the apples into medium-sized cubes.
Separately, in a large pot, place the water, sugar, cloves, cinnamon, zest and lemon juice. It will seem like there is a lot of liquid, but believe me, the apples will absorb it.
Cook these ingredients over medium heat and when the water starts to boil, add the apple cubes.
Let cook for 1 hour, stirring occasionally with a wooden spoon to prevent the apples from sticking to the bottom of the pot. You can adjust the cooking time according to the consistency you prefer for your compote.
When the apples are well-done and the compote has the desired consistency, remove from the heat and let cool. I suggest that you remove the spices before serving, unless you prefer to leave them for a more rustic presentation.
This compote is an ideal complement to roscón de reyes, Christmas cake, or simply to eat alone, enjoy!
