Thai Creamy Peanut Vegan Gnocchi Stir-Fry
This hearty Vegan Thai Peanut Gnocchi Stir-Fry is a delicious fusion of Italian and Thai flavors. Ingredients
For Stir-Fry:
- 16 ounce package of store-bought gnocchi
- 16 ounce bag of frozen mixed vegetables (broccoli, red bell pepper carrots etc.)
- 1 tablespoon olive oil
- salt and pepper to taste
For Peanut Sauce:
- 1⁄2 Cup creamy natural peanut butter
- 1⁄4 Cup low-sodium soy sauce
- 2 tbls maple syrup
- 2 tbls rice vinegar
- 11⁄2 tbls lime juice
- 2 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1⁄2 teaspoon crushed red pepper flakes

Directions
Start by boiling the gnocchi as per the instructions on the package until they float to the surface. Drain and set them aside.
Heat the olive oil in a large skillet over medium heat, add the frozen vegetables and season with salt and pepper. Stir fry until they’re crisp-tender, about 5-7 minutes.
While the vegetables are being cooked, prepare the peanut sauce. In a bowl, whisk together the ingredients for the peanut sauce until it’s smooth.
Once the vegetables are cooked, add the cooked gnocchi to the pan and pour over the peanut sauce. Stir everything together until the gnocchi and vegetables are evenly coated in the sauce.
Serve the stir-fry hot. If desired, garnish with additional crushed red pepper flakes or freshly chopped cilantro.
