Wash the celery stalks under cold running water and with the help of a peeler remove the strands from the surface. Finely chop the stalk and place it in a bowl.

Finely chop the romaine lettuce and chop peeled walnuts. Add to the bowl.

Wash, dry and cut the apple into sticks. Squeeze the juice of half a lemon over the apple sticks, stir well and add to the bowl with the rest of the ingredients. Salt to taste and stir.

In a bowl, add the plain Greek yoghurt, Dijon mustard, salt and pepper, a drizzle of extra virgin olive oil and the juice of half a lemon. Mix, taste and correct any ingredients if necessary.

Pour 3 tablespoons of yoghurt sauce over the salad and mix until it is well impregnated.

Serve and garnish with a couple of pieces of walnut and some celery leaves.
