Directions

60 min.
1. Step

1. to make Toffifee cookies, take a bowl and whisk together the butter, sugar, salt and egg yolks. I have found that the consistency improves when the butter is at room temperature.

2. Step

Add the flour and knead everything thoroughly to form a smooth dough. A hand mixer with kneading attachments or a food processor is very helpful for this.

3. Step

Shape the dough into a ball, cover with cling film and leave to rest in the fridge for about 30 minutes. The dough is easier to shape when it is well chilled.

4. Step

Preheat the oven to 180 degrees and line a baking tray with baking paper.

5. Step

Roll out the dough on a floured work surface and cut out cookies using a round cookie cutter. I recommend a diameter of approx. 5 cm to make room for the Toffifee.

6. Step

Place a Toffifee on each cookie and carefully shape the dough around it.

7. Step

Bake the cookies for about 10-12 minutes. They should be lightly browned, but not too dark.

8. Step

Leave the Toffifee cookies to cool and then finish them off with the chocolate icing. I have had good experiences by melting the icing in a bain-marie and then drizzling it over the cookies.
