Ultimate Cheesy Super Nacho Bowls
Entice your taste buds with a colourful and delicious concoction of crunch and zest. Nacho Bowls serve as a perfect snack or a fun dinner option that it is full of flavour and packed with nutritious ingredients. Slightly spicy, crunchy and delightfully cheesy, these are perfect for parties, gatherings or even a fun family dinner night.
Ingredients
- 1 bag of your favorite Nachos
- 2 cups shredded cheddar cheese
- 1 Cup canned black beans (drained and rinsed)
- 1 Cup sweet corn kernels (drained and rinsed)
- 1 large red bell pepper (chopped)
- 1 large green bell pepper (chopped)
- 1 large onion (diced)
- 2 jalapeno peppers (seeded and sliced)
- 1 Cup of sour cream
- 1 Cup store-bought salsa
- 1 handful of fresh chopped coriander
- 1 Cup of guacamole
- salt and pepper to taste
- 2 tbls of olive oil

Directions
Preheat your oven to 200°C and line your baking tray with parchment paper.
Place a layer of nachos on the tray, covering it with a sprinkle of shredded cheddar.
Scatter a portion of the black beans, sweet corn, red and green bell peppers, and onions over your Nachos.
Repeat the layers until all the nachos and other ingredients are used up, ensuring that cheese is on the topmost layer.
Bake the Nachos for about 15-20 minutes until the cheese is melted bubbly, and lightly golden.
While the Nachos are getting baked, heat the olive oil in a pan and sauté the sliced jalapenos till they are soft. Set aside.
Once baked, remove the Nachos from the oven and top them with sautéed jalapenos, dollops of sour cream, salsa, and guacamole.
Garnish with fresh coriander and serve the Nacho bowls warm.
