Ultimate Tim Tam Chocolate Layer Cake
Love Tim Tams? Then you will be on cloud nine with our Tim Tam Cake! It's a chocolate cake with Tim Tam-infused buttercream icing, with a generous topping of crushed Tim Tam biscuits - a delightful treat that is sure to impress any Tim Tam lover.
Ingredients
For the cake:
- 2 cups of sugar
- 13⁄4 cups all-purpose flour
- 3⁄4 Cup unsweetened cocoa powder
- 11⁄2 teaspoons baking powder
- 11⁄2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 Cup milk
- 1⁄2 Cup vegetable oil
- 2 teaspoons vanilla extract
- 1 Cup boiling water
For the frosting:
- 1 pack of Tim Tam biscuits
- 1 Cup Unsalted Butter (room temperature)
- 31⁄2 cups confectionery sugar
- 1⁄2 Cup heavy cream
- 1 teaspoon vanilla extract
For the decoration:
- Additional crushed Tim Tams

Preheat your oven to 175C (350F) and grease your cake tin.
In a large bowl, mix together sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, milk, oil and vanilla and mix for about 2 minutes. Stir in the boiling water last. The batter may be a bit thin, this is expected.
Pour the batter into an 8-inch cake tin and bake for 30-35 minutes or until a skewer inserted into the center comes out clean.
While waiting for the cake to cool, prepare the frosting. Start by blending 1 pack of Tim Tams in a food processor until it is completely crushed into fine crumbs.
In a large bowl, beat the butter until it is creamy, gradually add powdered sugar, then add the crushed Tim Tams, heavy cream, and vanilla extract. Beat for about 3 minutes until the frosting is light and fluffy.
Once your cake is completely cooled, spread the frosting evenly over the cake. Finish off with a decoration of additional crushed Tim Tams.
