Vegan Classic Italian Carbonara Gnocchi
This dish is a healthy, vegan take on the classic Italian carbonara, replacing traditional bacon with vegan bacon and egg yolks with silky vegan bechamel sauce. It is not only satisfying and flavorful but also packed with delicious plant protein. Perfect to enjoy on a cozy weeknight dinner.
Ingredients
- 500 g gnocchi
- 200 g vegan bacon
- 2 tbls olive oil
- 4 cloves garlic, minced
- 1 yellow onion, chopped
- 2 cups Unsweetened Almond Milk
- 2 tbls whole-wheat flour
- salt and pepper to taste
- fresh parsley, chopped
- Vegan Parmesan, for garnish

Directions
Cook the gnocchi according to the package instructions. Drain and set aside.
Heat the olive oil in a large pan over medium heat. Add the vegan bacon and cook until crispy.
Add the garlic and onion to the pan and sauté until the onion turns transparant.
In a separate bowl, whisk together the almond milk, flour, and nutritional yeast until smooth. Pour this mixture into the pan and allow it to thicken, stirring continuously.
Add the cooked gnocchi to the sauce and stir until the gnocchi are coated. Season with salt and black pepper.
Remove the pan from heat and garnish the gnocchi with fresh parsley and vegan Parmesan before serving.
