Vegan Classic Italian Pesto Gnocchi

- 500 g of ready-made vegan gnocchi
- 2 cups Fresh Basil (packed)
- 1⁄2 Cup Walnuts or Pine nuts
- 4 cloves garlic
- 1⁄2 Cup olive oil
- Salt and pepper, to taste

Directions
Prepare the vegan pesto by blending basil, nuts, and garlic in a food processor till finely chopped. While the machine is running, slowly drizzle in the olive oil and blend until smooth. Add nutritional yeast and season with salt and pepper. Blend again to mix everything together.
Cook the gnocchi as per the package instructions, until they float to the top of boiling water. Draining and set aside.
Heat a little olive oil in a pan and add cooked the gnocchi. Fry them until they are slightly browned for extra flavor and texture. This step is optional but recommended.
Reduce the heat and add the pesto to the gnocchi in the pan, gently stirring to ensure the gnocchi are evenly coated.
Plate your gnocchi and garnish with extra basil leaves if desired. Your vegan pesto gnocchi is ready to be served.
