Walnut cake with mascarpone
This walnut cake with mascarpone is a great choice for all occasions, whether it's a birthday, a name day celebration or just because you're craving something sweet.
Ingredients
For the Corps:
- 200 g Ground walnuts
- 100 g flour
- 100 g butter
- 3 pcs Eggs
- 150 g sugar
- 1⁄2 packaging baking powder
- 1 teaspoon Vanilla extract
For the cream:
- 500 g mascarpone
- 200 g confectionery sugar
- Juice and grated lemon rind
For decoration:
- white chocolate
- Nuts for garnish

Directions
Start by preheating the oven to 180 °C and preparing a baking tray lined with baking paper.
In a bowl, mix the walnuts, flour and baking powder. These ingredients form the base of the crust.
Beat the butter, sugar and eggs until foamy. It's important to keep the butter at room temperature so you can whip it better.
Add the nut mixture and vanilla extract to the butter mousse. Mix everything well.
Pour the batter into the prepared tin and bake in the oven for about 30-40 min, or until the cake is cooked through. The walnut crust tends to be done quickly, so try to prick it after half an hour of baking.
Let the cake cool after baking.
Meanwhile, prepare the cream. Mix the mascarpone with the icing sugar, juice and grated lemon zest.
Cut the crust into 2 or 3 parts and spread the mascarpone cream between them.
Spread the remaining cream on the outside of the cake.
You can decorate it according to your own imagination, for example, pour chocolate over it and put pieces of nuts on it.
