White cauliflower soup
Recipe for our regularly cooked white cauliflower soup with cream.
Ingredients
- 1 pcs cauliflower
- 1 pcs onion
- 2 cloves garlic
- 3 spoons butter
- 1 spoon Plain flour
- 750 ml broth
- 100 ml cooking cream
- Salt, pepper to taste

Directions
Let's start by preparing the cauliflower. I divide it into rosettes and rinse it in cold water.
Peel the onion and garlic and chop finely. Then I sauté the onions in a pot with butter until golden brown. I add the garlic and fry for another minute.
I add the cauliflower to the pot and stir to brown all sides. Then I add the flour, stir and let it toast over medium heat.
I gradually add the broth to the pot and stir it. I cook the soup over medium heat for 20 to 25 minutes, until the cauliflower is completely soft.
When the cauliflower is soft, I take the pot off the heat and let it cool for a while. Then I blend the soup in a blender until smooth.
Towards the end, I add more cream to the cauliflower soup, stir it and let it simmer for a while so that all the flavours blend nicely.
Don't forget to season the cauliflower soup with salt and pepper.
