1. Step

Grate the zucchini on a coarse grater, salt it and let it stand for 10 minutes.

2. Step

Strain the zucchini and squeeze out the excess water.

3. Step

Heat a little oil in a pan, in which we roast the finely chopped onion.

We add ground sweet paprika and roast it for a minute.

5. Step

Put the zucchini in the pan together with mustard, ketchup and soy sauce and cook, stirring occasionally for 7-8 minutes.

Finally, we add pressed garlic cloves, season to taste, and let it cook for another 2-3 minutes.

We serve the prepared zucchini tartare on toasted whole grain bread sprinkled with chives.
