Amazing Authentic Chinese Cashew Nut Chicken

Ingredients
- 500 gms boneless and skinless chicken breast, cut into pieces
- 1 Cup cashews
- 3 tbls vegetable oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon maize starch
- 1⁄4 Cup soy sauce
- 2 tbls hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- salt and black pepper to taste

Directions
Heat 2 tablespoons of the vegetable oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, heat the remaining tablespoon of oil. Add the diced red and green bell peppers, diced onion, and minced garlic. Cook until vegetables are tender, about 5-7 minutes.
In a small bowl, whisk together the cornstarch, soy sauce, hoisin sauce, rice vinegar, brown sugar, and sesame oil until smooth.
Return cooked chicken to the skillet with the vegetables. Pour the sauce over the mixture and stir to coat.
Stir in the cashews and season with salt and black pepper to taste. Cook for an additional 2-3 minutes until sauce is thickened and heated through.
Serve the Cashew Chicken hot, ideally over white or brown rice
