- 1 Manchego cheese
- 2 cups milk
- 2 tablespoon butter
- 1 tbsp flour
- 1 Jalapeno pepper
- 1 a piece red bell pepper
- 1 a piece onion
- 1 clove garlic
- cumin powder
- salt
- ground black pepper

Heat a frying pan or saucepan over medium heat and add the butter to melt.
Add the onion and garlic and sauté until the onion is translucent.
Add the red pepper and jalapeño and stir-fry for a few more minutes until softened.
Add the milk and the flour. Mix well until the flour is well dissolved and there are no lumps.
Season with cumin, salt and pepper.
Turn the heat to low, and slowly add the cheese to melt, stirring constantly.
Serve immediately with chips or whatever you prefer.
