1. Step

Add the minced pork to a saucepan. Fry the pork, breaking it into small minced pieces until it’s fully cooked. Take the pork off the heat.

2. Step

Add 1 heaping tablespoon of the toasted rice powder to the pork. Then, add the chilli flakes.

3. Step

Add a pinch of sugar and fish sauce. Squeeze in the juice from 2 limes.

4. Step

Give the pork and the seasoning a quick stir.

Peel and slice the shallots, finely mince about 5 green onions and a few culantro leaves and just pluck 20 mint leaves. Throw everything into the saucepan with the pork.

6. Step

Give the larb moo a good mix, making sure all the spices and dressing coats the pork.

Dish it out onto a plate and garnish with more mint leaves, Thai sweet basil, and culantro.
