Ingredients
- 1 kg boneless lamb leg, cut into cubes
- 4 cloves of garlic, minced
- 1 small red onion, finely chopped
- The juice and zest of two lemons
- 3 tbls of olive oil
- 1 tablespoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- salt and pepper to taste
- 4 wooden or metal skewers
- Tzatziki sauce, for serving
- Pita bread, for serving

In a large bowl, combine the garlic, lemon juice and zest, olive oil, oregano, thyme, paprika, and salt and pepper. Add the lamb cubes and toss well to coat all the pieces. Let the meat marinate for at least one hour, but if time allows, leave it overnight in the refrigerator for better flavor infusion.
When ready to cook, preheat your grill or broiler.
Thread the marinated lamb cubes onto wooden or metal skewers. Don't pack them too tightly; leaving a slight gap between the pieces ensures even cooking.
