Best Ever Creamy Chicken Carbonara Recipe
Chicken Carbonara is a classic Italian dish that is a crowd pleaser and can suit a variety of tastes. Creamy, full of flavors, and sure to let anyone enjoy a fancy, restaurant-like dish at home. The combination of chicken, bacon, eggs, and parmigiano-reggiano cheese makes for a deliciously satisfying meal filled with comfort and taste.
Ingredients
- 2 chicken breasts
- 150 g of Pancetta or Bacon, chopped
- 2 fresh Eggs
- 80 g Parmigiano-Reggiano cheese, plus extra to serve
- Salt, to taste
- Freshly ground black pepper, to taste
- 350 g of spaghetti
- 1 tablespoon olive oil
- 2 clove of garlic, minced
- Fresh Parsley leaves for garnish

Directions
Start by boiling water in a pot for the pasta. Once boiling, add a pinch of salt and then the pasta. Cook the spaghetti per the instructions on the package until al dente.
While pasta is cooking, in a large pan, add olive oil and heat over medium heat. Add the pancetta or bacon and cook until crispy.
In the same pan, add chicken breasts and cook until golden brown and no longer pink in the middle. Set aside the cooked pancetta/bacon and chicken.
In the same pan, add the minced garlic and sauté for about 1 minute or until fragrant.
In a separate bowl, whisk together the egg, cheese, salt, and pepper.
Once the pasta is cooked, drain and reserve a cup of the pasta water.
Put the pasta back into the pot and while the pasta is still hot, slowly pour in the egg and cheese mixture, tossing the spaghetti continuously. The heat of the pasta will cook the raw egg slightly.
Thin out the sauce with some of the reserved pasta water, until it reaches desired consistency.
Add back the cooked chicken and crispy pancetta/bacon to the pasta and stir to combine well.
Serve immediately with a sprinkle of extra cheese and some parsley on top for garnish.
