Cover the pork cutlets in parchment paper and tenderize them with a rolling pin.

2. Step

Place a cutlet piece out flat and lay a slice of bacon or pancetta on top of it. It's best to trim the bacon so that the cutlet overlaps it slightly.

3. Step

Place a small chunk of cheese and a sprig of parsley on one end.

4. Step

Roll the cutlet up like a burrito, tucking the edges in as you go to make a solid roll. Close it by sticking toothpicks through the bombetta.
