Carp Blue a la Grandma's Style
Carp Blue is a traditional German dish, often served at Christmas. The carp is cooked in a spicy broth and then served in a special blue sauce. This dish is not only delicious, but also healthy, as carp are rich in Omega-3 fatty acids.
Ingredients
For the carp
- 1 Piece Fresh carp
- 2 l water
- 250 ml vinegar
- 2 Piece Onions
- 5 Piece Peppercorns
- 2 Piece Bay leaves
- 1⁄2 bunch parsley
For the sauce
- 250 ml Carp soup
- 125 g butter
- 50 g flour
- 1 Tablespoon lemon juice
- 2 Egg yolk Eggs

Directions
To prepare carp blue, first prepare the carp. Scale and clean the fish. Then cut the fish into slices about 5 cm thick.
In a large pot, bring the water, vinegar, onions, peppercorns, bay leaves, and parsley to a boil.
Put the carp into the boiling broth and let it steep for about 20 minutes.
For the sauce, melt butter in a pan and stir in the flour. Then add the carp broth and lemon juice. Refine the sauce with the egg yolks. The traditional 'Carp blue' recipe is ready to serve!
Serve the carp with the sauce. Enjoy your meal!
