Chinese Pot Sticker Dumplings with Soy Dipping Sauce
Pot Sticker Dumplings are a popular Chinese dish that are sometimes colloquially referred to as \Peking Ravioli\ They are crisp on the bottom and tender on the top, filled with flavorful ground meats or vegetables and are typically served with a dipping sauce. These pot sticker dumplings are homemade, delicious, filling and versatile for any occasion.
Ingredients
- 1⁄2 lb ground pork
- 1 Cup finely chopped cabbage
- 1⁄4 Cup finely chopped scallions
- 1 clove garlic, minced
- 1 egg, lightly beaten
- 2 teaspoons soy sauce
- 1⁄2 teaspoon sesame oil
- 1⁄4 teaspoon freshly ground black pepper
- 24 potsticker or gyoza wrappers
- 2 tbls vegetable oil, for pan frying
- Dipping Sauce: Soy sauce, rice vinegar sesame oil

Directions
In a large bowl, combine ground pork, cabbage, scallions, garlic, beaten egg, soy sauce, sesame oil and black pepper. Mix well.
To assemble the potstickers, place a spoonful of the pork mixture in the center of each gyoza wrapper.
Wet the edges of the wrapper with water. Fold the wrapper over the filling and pinch together at the top to seal, creating a crescent shape. Set aside.
In a large non-stick pan, heat 2 tablespoons of vegetable oil over medium heat. Place half of the potstickers in the pan, flat-side down.
Cook until the bottom of the dumplings are lightly browned, about 2 to 3 minutes.
Carefully pour 1/2 cup of water into the pan, cover, and cook until the water has evaporated and the dumplings are crisp and golden on the bottom, about 7 more minutes.
Repeat with the remaining half of potstickers.
Serve with your preferred dipping sauce- a mixture of soy sauce, rice vinegar and sesame oil works great.
